MY HOMEMADE - Nutty Berry Rusk Recipe

Ready to add a sprinkle of joy to your mornings?

Try these lekker Nutty Berry Rusks, perfect for dunking in your coffee or enjoying on their own.

There's nothing better than dunking rusks into a coffee during an early morning game drive.

It's when I fell in love with this cherished tradition, savoring a healthy start before we hit the raod again on a sunny, hot day in the South African wilderness.

Ingredients: * what I prefer

🌾 2 cups (240grams) whole wheat flour (* a mix of wheat, rice and coconut flour)

🥣 1 cup (90 grams) rolled oats (* whole grain cornflakes or quinoa flakes)

🌰 1/2 cup (60 grams) mixed nuts (* almonds, cashew, pistachio or your nutty pick)

🌻 1/2 cup (70 grams) mixed seeds (* sunflower, pumpkin or chia seeds)

🍇 1/2 cup (75 grams) dried berries (* cranberries, blueberries and raisins)

🍯 1/2 cup (100 grams) brown sugar (or a sweetener you adore)

🥄 1 teaspoon (4grams) baking powder

🧂 1/2 teaspoon salt

🍂 1 teaspoon cinnamon (* my winter edition!)

🥥 1/2 cup (115 grams) melted coconut oil (or butter, *I like to add both!)

🥛 1/2 cup (120 ml) milk (dairy, plant-based or buttermilk, is my pick!)

🥚 2 large eggs (* 3 work for me, 2!)

🍦 1 teaspoon vanilla extract (* I rather add 2 teaspoon of crunchy peanut butter!)

Instructions:

Preheat the Fun: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix the Magic: In a big bowl, combine the flour, oats, nuts, seeds, berries, sugar, baking powder, salt, and cinnamon. (Don't forget - stir with love!)

Whisk the Wonder: In another bowl, whisk together the coconut oil, milk, eggs, and vanilla until they're best friends.

Combine with Joy: Pour the wet ingredients into the dry mix, stirring until everything's cozy and combined. (this is the fun part, use your hands for it...)

Shape Your Masterpiece: Spread the mixture onto the baking sheet, shaping it into a flat, rectangular loaf about 1 inch (2 cm) thick.

Bake with Love: Pop it in the oven for 25-30 minutes until it’s golden and firm on top.

Cool & Slice: Let it cool a bit, then slice into rusks.

Dry for Crunch: Lower the oven to 210°F (100°C). Bake the slices for another 30-40 minutes until they’re crispy and ready to crunch. Occasionally open the door to release moisture. If they remain wet, reduce the temperature to 170°F (80°C) and bake for another hour, briefly opening the door to release steam. Once done, and they seem to look crunchy now, turn off the oven and leave them inside overnight for the perfect crunch.

If they turn out differently each time, don't be discouraged. Each batch is unique because I use whatever ingredients I have on hand, always opting for organic products. Sometimes they’re crunchier, nuttier, or even sweeter than before.
